Camp coffee out of a graniteware percolator is a different thing from camp coffee out of a modern device. The flavor is partly nostalgia and partly chemistry — enamel is inert, the coffee picks up no metallic notes, and percolation at camp-stove heat produces a specific strength and body that pour-over methods don’t replicate.
